От похожих родов <a target=_blank href=http://ru.wikipedia.org/wiki/%D0%96%D0%B0%D0%B1%D1%80%D0%B8%D1%86%D0%B0>жабрица</a> и <a target=_blank href=http://ru.wikipedia.org/wiki/%D0%9A%D0%BE%D0%BA%D0%BE%D1%80%D1%8B%D1%88>кокорыш</a>, согласно определителю растений Ленобласти, купырь отличается также бороздками на стеблях и формой листьев: они широко-треугольные, у нижних и средних сегментов первого порядка есть хорошо выраженные черешки, а конечные средние сегменты листьев перистолопастные до конца.</p><p>Корень у купыря похож на морковку, что не могло не вызвать гастрономический интерес у наших предков, особенно учитывая изобилие биомассы. Предки выяснили, что листья и стебли купыря можно рубить в салат и окрошку, мариновать и квасить, корни можно варить и употреблять; в словаре Даля также упоминается купырное вино. Причём в русской википедии пишут, что у листьев приятный запах, а в английской — что наоборот, неприятный. Пчеловоды ценят купырь как медонос, а ещё стеблями и листьями можно красить шерсть в жёлтый цвет.</p><p>Английская википедия также указывает, что соком лесного купыря, <em>по слухам,</em> можно натирать кожу в качестве репеллента от комаров, но только главное не перепутать его с <a target=_blank href=http://en.wikipedia.org/wiki/Heracleum_mantegazzianum>одним из видов борщевика, который по-английски  тоже коровья петрушка, но гигантская (<em>giant cow parsley</em>)</a> и вызывает ожоги. Впрочем, с борщевиком-то сходство в основном филологическое, сложно спутать. А вот перед дегустацией купыря в салате придётся внимательно изучить все его анатомические особенности: если вместо купыря слопать похожие кокорыш, жабрицу (см. выше) или <a target=_blank href=http://ru.wikipedia.org/wiki/%D0%91%D0%BE%D0%BB%D0%B8%D0%B3%D0%BE%D0%BB%D0%BE%D0%B2>болиголов</a> (отличается формой семян, например), то будет плохо.</p><p>А лучше всего — положите в салат петрушку с грядки, не ошибётесь :). Оставьте купыри для голодных времён. Cow parsley can be distinguished from similar plants, such as <a target=_blank href=http://www.shootgardening.co.uk/plant/seseli-libanotis>moon carrots</a> and <a target=_blank href=>fool's parsley</a>, by deep streaks on the stem and by the form of leaves: they are broad triangulate, lower and middle leaflets have distinct petiolules; the terminal leaflets are pinnate to the very end.</p><p>The root of cow parsley looks like a carrot and, of course, our ancestors could not resist to check edibility of such abundant plant. They found that stems and leaves can be used in salads; roots can be eaten after boiling. However, it can be confused with giant cow parsley, the sap of which can cause severe burns after coming in contact with the skin</a>. </p><p>Well, I think distinguishing cow parsley from giant cow parsley is not a problem. But if you decide to try cow parsley in a salad, be very attentive to its anatomy so that not to eat something similar and poisonous: moon carrots, fool's parsley (see above) or <a target=_blank href=http://en.wikipedia.org/wiki/Poison_hemlock>hemlock</a> (the latter has another form of seeds, for example).</p><p>To tell the truth, I think that best of all would be putting garden parsley into your salad and leaving cow parsleys for some worse days :).
